Coconut Flaxseed Cereal*

This is a great alternative to standard oatmeal and is fairly filling. Use this version to change things up a little bit and take advantage of all the benefits of coconut!

1/2 cup coconut milk or unsweetened almond milk
1/2 cup ground flaxseeds (can be purchased pre-ground)
1/4 cup unsweetened coconut flakes
1/4 cup chopped walnuts, walnut halves, or raw hulled sunflower seeds Ground Cinnamon (to taste)
1/4 cup sliced strawberries, blueberries, or other berries

Combine the milk, ground flaxseeds, coconut flakes, and walnuts or sunflower seeds in microwave for 1 minute. Serve topped with cinnamon and berries.
